Do any of you ever get into those moods where you would die for a pancake but you're on a diet and you know they're not good for you? Well, if you are, I have the solution; Banana pancakes.
What you will need for two medium pancakes:
1 banana
2 eggs
a medium sized frying pan
a masher (or a fork or blender)
a large bowl
toppings (chocolate sauce, strawberries, honey, syrup, sugar, lemon, etc)
Start by slicing the banana up and cracking two eggs into the bowl.
Next, heat the pan up and put a little butter in there, allowing it to melt so that the pancakes don't stick. Whilst the pan heats, mush up the banana and the eggs together to create a batter mix.
Once the butter has melted, pour half of the batter mix into the pan and cook as if you would any normal pancake, flipping it over once it begins to brown on the underside so that it cooks evenly throughout.
When both sides are cooked, you can then grab a plate and dish them up, placing your toppings on them before you relax and enjoy the snack that tastes fattening but is in fact a great source of protein.
